Healthy Chicken Pot Pie

Don't know what to make for dinner tonight? This Hungry Girl recipe is soooo easy and delicious, plus you'll have leftovers for lunch!

Cooking the chicken. Go away pink!


The Teet was having a sale on mixed veggies so I went with a soup mix, which has way more veggies and still tastes good.


98% fat free if you can't read the blurz


Mix all the above goodness together and stick in the oven.


While the goodness is cooking just roll out some crescent dough which will be the "crust"


The final product after baking for 5 extra minutes with the dough.


Eat up!

Cheesecake Marbled Brownies

My boyfriend is awesome because not only did he make me these amazing Cheesecake Marbled Brownies, but he photographed the process for my blog. :::swoon::: Here's how Ben's brownies turned out (in his commentary):

All the ingredients


Melting the chopped, unsweetened baker's chocolate and cubed butter using a make-shift double boiler on low heat.


Double boilers are the shit!


Mixing the egg whites into the melted butter and chocolate.


Slowly beating in the sugar, all-purpose flour, a pinch of salt and vanilla extract. The brownie batter became very, very thick.


I had warmed the cream cheese to room temperature but still had difficulty mixing in the sugar so I used the make-shift double boiler one more time (using an even lower temperature than with the chocolate and butter). After removing from the heat and allowing to return to room temperature once again, I added the vanilla extract.


When the cheesecake mixture was nice and smooth I slowly stirred in the miniature semi-sweet chocolate chips.


Ready for the greased pan!


The brownie batter was very easy to pan. I put dollops of the cheesecake mixture on top of the brownie batter then spread evenly.


I used a knife to create the marbling effect between the cheesecake and brownie layers.


The end product. I would heavily recommend cooling to room temperature then refrigerating before cutting into bite-sized squares. Keeping the brownies refrigerated improves the consistency of the cheesecake as well.

These were delicious and since we kept them in the fridge they were almost like pieces of fudge. Very rich and NOM NOM NOM! Thanks Ben!!

So I decided after seeing the photo below that I would institute WTF Wednesday. So if you see anything around the interwebz that makes you say, "WTF?" please send it my way.

Seriously? WTF?? Why would you even want to make a baby out of meat? Did you open your freezer and say, you know what, I have a shit ton of hamburger meat that needs to be used, let's make a fucking baby!! WEEE!! Oh and wouldn't it be funny to make a diaper out of bacon?!?

Or is this what forms in my belly when I eat too much and insist that I have a food baby? It's possible people.

Pistachio Salad

I used a recipe out of my old high school booster club cookbook (GO SPARTANS!) which is at my mom's house. It is SOOOO easy and you can just google "pistachio salad" to find plenty of variations. This dish, unfortunately, didn't make the tailgate because everyone forgot about it sitting in the fridge :( And please ignore my crappy camera skillz and awful lighting.

Is that Slimer? Nah, it's just J-E-L-L-O (sing it) mix, yes they make Pistachio Jello!

Add some mini marshmallows, about a cup.

1/2 cup of nuts of your choice (pervs, i know what you're thinking)

This is a can of crushed pineapple, but be sure to really drain it first or your salad will be watery.

Last step is a tub of Cool Whip, the whole damn delicious thing.

Then just chill in the fridge until you are ready to share it, or just forget about it in there and have it to eat all to yourself.

Peanut Butter Chocolate Chip Bacon Cookies

Okay, so I found this recipe at Joy the Baker, a blog I read on a regular basis. Her's are chocolate chip-less, but I am a chocoholic so I HAD to add them in and I am SO glad I did. And I doubled the recipe b/c I had a lot of mouths to feed at the tailgate.

2 cups peanut butter
2 cups sugar (1 cup brown sugar and 1 cup granulated sugar)
2 eggs
2 teaspoons baking soda
2 handfuls of chocolate chips (or more!)
12 slices of bacon, cooked, cooled and diced
(I cooked my bacon in the microwave b/c it's faster and creates less of a mess, it also tends to get nice and crispy)

Preheat oven to 350 degrees F.
Grease 2 baking sheets with butter and set aside. In a mixer combine peanut butter and sugars until well combined, about 2 minutes. Add eggs and baking soda and mix for another 2 minutes. Fold in cooked bacon and chips. Roll into large walnut sized balls and create a cris-cross pattern with a fork. Bake for 10 minutes, until lightly browned.

These were a huge hit at the tailgate and with the 'Ranga. They are super easy to make and I highly recommend them for your next party, tailgate or rainy day. Just make sure if you know of any vegetarians or non-pork eaters that you warn them of the bacon, because most cookies don't contain meat!!

I wasn't as prepared for this tailgate for two reasons: 1. because it was a last minute decision and 2. my mom had it completely under control. Okay, so maybe this was part of my problem.

Capital Cat Show

Cats set to take center stage at National Capital Cat Show


So, who's with me? Mrow? No really, we once had a cat we got at a cat show and named her Katie. She was really really weird and hid from everyone. Moral of this true story? Don't buy cats at cat shows.
Don't be jealous of their trophies.
